LIFE LESSONS IN A BROWNIE PAN

 When I was in junior high, we had a little ditty we used to sing, "I work best under pressure and they'll be lots of pressure if I wait until tomorrow."

Sometimes I wonder if I took that as my life's motto.

I had six of the last eight days off. I got some Christmas shopping taken care of, saw a movie with my mom--the excellent, The Theory Of Everything, and did some chores. I got some writing in as well--not as much as I should've gotten done considering the time I had off, but got some words on paper, so I'll take it. 

In the next three days I am swamped. I work 9-5 on each day and have nightly activities that can't be put off.


Tonight is Bunco in which I have to take a dessert for the Christmas potluck. Tomorrow is Mike's company Christmas party, and Saturday I'm doing a cookie exchange in Oregon.

So, yesterday I deemed a baking day. And a getting up my tree that I bought on Tuesday day.

I started with Snickerdoodles for the exchange and they came out a little flat, but delicious. Then I tackled the tree and realized I was short on lights--apparently this tree has a fuller bottom than previous trees.

When Jordan and I got home from her volunteer job at the Humane Society, I tackled the brownies for tonight. I had decided to make brownies with mint kisses. And this is the result. A chocolate gooey mess. Seriously. If you want a chocolate brownie sundae I'm your gal, but brownies for a potluck? Not so much.

And mind you, this is after trying to fix them by rebaking them for like fifteen minutes. I went to bed in utter defeat. Kristen suggested I go get a Walmart cheesecake. I didn't even know Walmart had cheesecakes.

This morning I got up early and hit up Allrecipes,com. I came up with a brownie recipe from scratch. So I baked those and added a fudge frosting specifically for brownies. I am out of sugar, chocolate chips, and flour, but look how delish those brownies look to your right.

So, the moral of this story is that even if you have a murky middle, you can find a way around it. Even if it means beginning again.

  1. LOL. Good for you! I'm having a church group party tonight and the dessert is coming fully prepared from the bakery in the grocery store. It's not my forte so I'm going to stop trying.

  2. Oh, do I know that! I'm so glad your second round of brownies came out - and they *do* look yummo! I can't one. :)

    I love to bake. Cooking, meh. But when the result is a sugar-laden pan of yumminess, I'm your girl! :)

    1. I can totally relate! Cooking is not my thing. I've been known to stress out fixing a taco salad. Seriously.

  4. Baking Day! That was earlier in the week for the Husband and I--rolls, cookies, fudge--all gifts for neighbors and friends. I always hold my breath when I make the first batch of rolls--sometimes the yeast doesn't work and they end up flat as pancakes. But Husband watched the milk heating this year, got it exactly 116 degrees and the yeast worked and all was well!

    1. Your hubby helped? That's awesome. Although my kitchen isn't big enough for another baker. It's seriously the size of a small apartment kitchen.
