My Favorite Christmas Recipe by Jana Richards

 

I’m behind on everything this Christmas: decorating, baking, buying gifts. As of this writing, I haven’t sent out a single Christmas card or decorated the tree. The renovations we did on our house in November put me behind. That, and wrapping up work before I officially retired. I thought I’d be done with work earlier, but my boss couldn’t find anyone to replace me. I guess I should be flattered. I didn’t know how irreplaceable I was!

Anyway, Christmas. Whenever I’m pushed for time Christmas baking-wise, I go back to my tried-and-true recipes, the ones I know I can make quickly and won’t let me down. So once more this year, I’ll be making Butter Tarts.

I don’t know if butter tarts are a “thing” in the USA, but they are definitely popular in Canada, right up there with other Canadian favorites like Nanaimo Bars, Saskatoon Berry pie and Timbits. The recipe I’m sharing is one I found in the newspaper some thirty years ago and I think I’ve made them every Christmas since. Since the filling is basically sugar and butter it can be very sweet, but the addition of a little vinegar cuts down any over-sweetness. You could make these without raisins if you’re not a fan, but personally I feel the raisins make the tart special. 

This year (and actually every year), to speed things along, I’ll be buying pre-made tart shells. But I make the filling, so it still counts as baking. That’s my story and I’m sticking to it! Here’s my recipe:


Butter Tarts

2 cups brown sugar

2 eggs

1 tsp. vanilla

1 ½ cup raisins

½ cup butter, softened

4 T. vinegar

Put all ingredients in a bowl and mix vigorously. Drop one tablespoon (approx.) of filling into each tart shell. Bake 350F for 20-22 minutes or until shell is golden brown. 

And that’s it. Easy peasy. Happy baking!

    1. Liz, I'm guessing that with pecans they would taste kind of like pecan pie. I've never tried that but I'll keep that variation in mind for the future!

  2. Those look yummy and festive! They remind me of mince pie, which is a staple at our house during the holidays.

  3. You know, I've never made mince pie or tarts and I probably haven't had mince since my mother-in-law passed away. Maybe next Christmas I'll make a few mince tarts. Hopefully next year I won't be so pressed for time!
